Pacific salmon and boiled egg sandwich on multigrain bread

PREPARATION:

INGREDIENTS:

  • 8 slices Origine multigrain loaf
  • 2 cans Pacific salmon, well drained
  • 2 hard-boiled eggs, sliced
  • 60 ml (4 tbsp.) mayonnaise
  • 10 ml (2 tsp.) lemon juice
  • 20 ml (4 tsp.) capers
  • 1 red onion, thinly sliced
  • Mesclun leaves
  • Salt and pepper to taste

PREPARATION:

Mix the salmon, mayonnaise, capers and lemon juice. Spread the mixture on the bread slices. Spread the remaining ingredients on the sandwich bread.
